Earlier this week I asked you on Facebook what kind of food reminded you of Valentine's Day. Italian food was almost unanimous. Lucky for me the dessert I had planned for hubby and I fit the bill. All I needed to figure out was an appetizer and a main course.
I was recently gifted The Sprouted Kitchen cookbook and love love love it. I decided to use this recipe from there, for a Roasted Cauliflower Capellini as our main course. As soon as I told hubby the theme we were going with for Valentine's Day, he instantly put in his opinion, which is... of course always bruschetta.
I have made this recipe numerous times and it's always been a hit. Never fails or disappoints. It is quick and easy enough to make in large quantities for parties but also perfect to cut the recipe for a stay-at-home meal for the two of us.
Ingredients
• 2 large tomatoes, coarsely chopped
• 1/2 sweet onion, chopped
• 2 tablespoons olive oil
• 1 tablespoon oregano
• 2 tablespoon chopped fresh basil
• 2 teaspoons chopped fresh parsley
• Loaf Italian bread
• 1/4 cup freshly grated Parmesan cheese
• 1 clove garlic
• Salt and Pepper to taste
Directions
Preheat oven to 400 degrees.
Chop all ingredients. In a medium bowl, combine tomatoes, onion, olive oil, oregano, basil and parsley.
Cut bread into approximately 1" slices. Place bread on a baking sheet. And top with your tomato mixture. Sprinkle cheese on top. Bake in preheated oven for 8 to 10 minutes, or until bottom of bread is browned.
Allow to cool 5 minutes before serving.
